Tad windy out there today isn’t it UK peeps? Marley, our cat, is running around the house like a possessed thing, it feels like it’s been raining for a whole month and I honestly can’t remember the last time the sun was out. This is the very definition of #Januaryfeels!!!
Anyway, on bleak January days like today, a delicious breakfast will always put a smile on my face!
Today, I had overnight bircher muesli with superfoods and frozen berries 🙂 The white chocolate stars and the dark chocolate curls make this breakfast seem so decadent, it could almost be dessert and a little of what you fancy, does you good! Balance! 🙂
I make my overnight oats/muesli in an old peanut butter jar – (size 227g) 🙂
Ingredients
Overnight muesli
- Unsweetened almond milk – fill the jar to just under halfway
- 3 tbsp bircher muesli base mix
- 1 tbsp organic cacao powder
- 1 tbsp chia seeds
- 1 tbsp protein powder
- 1 tsp omega super powder
- Optional – if you have a mega sweet tooth, add a tsp honey or maple syrup
Topping
- 1 tbsp vanilla yogurt
- 1 tbsp frozen berries
- 1 tsp white chocolate stars
- 1 tsp dark chocolate curls
Directions
- Pop all the overnight muesli ingredients in the jar
- Shake it well – adding more liquid or muesli if required (don’t forget the muesli will soak up the liquid and expand)
- Pop in the fridge and leave overnight
- Take it out in the morning and pop in a bowl
- Spoon the yogurt on top
- Add the frozen fruits, chocolate stars and curls
