Peanut Butter & Chia Seed Overnight Oats

Hi, my name is Tash and I am a peanut butter addict 😀 There are worse things to be addicted to though right 😉

These are my overnight oats with chia seeds made in a peanut butter jar that is just less than 1/4 full and it is delicious! Filling and nutritious and made the night before, this is a perfect quick breakfast option for all you busy peeps 🙂 It literally takes 2 minutes to prepare 🙂

Ingredients

  • Peanut butter – the last bit of a jar 🙂
  • Organic oats – up to around a 1/3 of the jar
  • Chia seeds – 1 tbsp.
  • Almond milk (or any milk you like) – Fill up so that the jar is 3/4 full

Directions 

  1. Push the remaining bit of peanut butter to the sides of the jar (for even distribution when eating 🙂 )
  2. Pop in the oats and chia seeds in and add the milk
  3. Pop the top on the jar and shake to mix it all up
  4. Pop in the fridge overnight
  5. Take out the next morning and top with whatever you like or just eat is as it is 🙂
  6. I topped mine with dessicated coconut, freeze dried raspberries, a tsp. of Hartland Fudge vegan chocolate spread and strawberries 🙂

Creamy Protein Smoothie

A delicious smoothie combination made using nourishing ingredients that keep you full and fuel your body 🙂

Ingredients

  • 1 scoop – protein powder – I used The Organic Protein Company Whey Protein
  • 1/2-3/4 cup – unsweetened almond milk
  • 1/3 cup water
  • 3 tbsp – honey Greek yogurt – I used Rachel’s Organic Greek Yogurt
  • 1 tbsp – chia seeds –  I used Chia Charge seeds
  • 1 pack – frozen smoothie mix – kale, spinach, mango & kiwi – available in most supermarkets

Whizz up in a blender and then top with granola and dried raspberries for a delish crunch 😀

Banana & Cacao Superfood Muffins

When you fancy a muffin but really don’t want to eat refined sugar and over processed food, these are fab! Quick and easy to make and really chocolatey 🙂 AND cacao is a superfood so they’re actually good for you 🙂

I added cacao nibs to create chocolate chips and they worked a treat 🙂

Ingredients – for 4-6 large muffins

  • Ripe or overripe bananas x 2
  • Egg yolks x 2
  • Coconut oil – 1/4 cup
  • Baking soda – 1 tsp.
  • Salt – 1/2 tsp.
  • Honey – 4 tbsp.
  • Maple syrup – 2 tbsp.
  • Almond milk – 1/4 cup
  • Sugar free caramel syrup (optional) – 2 tbsp.
  • Wholemeal self-raising flour – 1.5-2 cups depending on consistency
  • Cacao powder – 4 tbsp.
  • Cacao nibs – 2 tbsp.

Directions

  1. Pre-heat oven to gas mark 5 / 190
  2. Mash bananas in a mixing bowl
  3. Add melted coconut oil, egg yolks, baking soda, salt, honey, maple syrup, caramel syrup and almond milk and whisk gently for a smooth batter
  4. Fold in flour and cacao powder
  5. Add cacao nibs
  6. Stir thoroughly mixing everything together
  7. Pour the mixture into large muffin cases and place into a muffin tray
  8. Bake for 30-45 mins (or until a knife comes out clean when poked in the middle of one)

Easy peasy 🙂

Cacao & Cherry Flapjack Brownie

Oh my goodness… this is by far my fave flapjack recipe yet!! 🙂 It’s so chocolatey that it tastes like brownie and it’s made using only Cacao for the choc flavour and guess what… yep – cacao is a superfood!! Enter my face! 😉

Ingredients

  • Oats – 2 cups
  • Coconut oil – 1/2 cup
  • Maple Syrup – 1/2 cup
  • Cacao – 5 tbsp.
  • Glace cherries – 200g (you can use less if you prefer but I like them – A LOT) 😉 Also, I ate about 4 of the cherries before they reached the mixing bowl so a little less than 200g went in but we won’t mention that 😉
  • Dried cranberries – 1 tbsp.
  • Sultanas – 1 tbsp.

Make it

  1. Pre-heat the oven to 180 degrees / gas mark 4
  2. Grease some grease proof paper and put into an oven dish or grease the oven dish
  3. Pop the oats in a mixing bowl and add the coconut oil, maple syrup and cacao mixing well whist adding them
  4. Chop up the cherries and add them in making sure they are all mixed in well
  5. Add the cranberries and the sultanas and yep – you guessed it – mix that bad boy! 🙂
  6. Pop the mixture into the oven dish
  7. Bake in the oven for 40-50 mins – checking to ensure it doesn’t burn – once the top is hardened you are good to go
  8. Leave to cool whilst you drool (it smells divine)

Slice and enjoy! Boy these are good!! 🙂

Gammon & Poached Egg Salad

Gammon is such a tasty addition to any salad, especially if it’s smoked *licks lips*! 😀 Pop it on some seasonal asparagus and you’ve got yourself a really yummy summer salad 🙂 Now all we need is some sunshine in the UK… we seem to be living under a blanket of cloud! 😦

Ingredients

  • Smoked gammon joint
  • Asparagus
  • Egg
  • Salad; spinach, rocket, etc.
  • Cherry tomatoes
  • Butternut squash
  • Sweet potato
  • Cucumber
  • Salt & Pepper

Make it

  1. Oven roast the gammon joint by following the instructions on the packet
  2. Cut sweet potato and butternut squash into cubes and pop in microwaveable dish for 3-7 minutes depending on how much you are cooking – you want it to be soft
  3. Pop the salad in a bowl / plate
  4. Chop and add the gammon, cherry tomatoes and cucumber
  5. Add the butternut squash and sweet potato
  6. Grill the asparagus for 2-3 minutes turning over occasionally
  7. Poach the egg whilst the asparagus is being grilled – 3-6 mins until it is cooked through and the egg white is no longer runny
  8. Pop the asparagus on top of the salad and the egg on top
  9. Sprinkle salt & pepper to taste
  10. Use a salad dressing of your choice

Basil Pesto Chicken Crunch Salad

imageSuch an easy fuss free way of cooking a healthy meal…coat some chicken breasts with basil pesto and olive oil to keep them moist, bake in the oven and then pop them on top of a fresh and crunchy salad 🙂 Scrumptious! 😀 Now all we need is the sun to stay out 😉

Green pesto makes this chicken look kinda mouldy 😀 BUT let’s ignore that and just believe me when I say it tastes good! 😉

Ingredients – pp

  • Chicken breast – 1 pp
  • Basil pesto – I used pre-made 🙂 – 1 tbsp
  • Superfood salad; spinach, rocket, beetroot, etc. – 1-2 cup
  • Red and yellow peppers – 1/2 of each
  • Cherry tomatoes – 1/2 cup
  • Olives – green and black pitted – 1/4 cup
  • Avocado – 1/2
  • Salad dressing of your choice – I used green pesto salad dressing to match the flavour in the chicken – 1-2 tbsp.
  • Extra Virgin olive oil – 1-2 tbsp.

Make it

  1. Coat the chicken breasts in extra virgin olive oil and the green pesto and pop in an oven proof dish, cover in foil and pop in the oven on gas mark 5 / 190 degrees for 30 minutes.
  2. Take off the foil and pop the chicken back in the oven for 15-20 minutes
  3. Pop the salad in a bowl / on a plate
  4. Chop the peppers, cherry tomatoes and olives and sprinkle them in the salad
  5. Pop the chicken breast on top
  6. Drizzle the salad dressing
  7. Enjoy

Berrylicious Smoothie Bowl

Smoothie bowls are so yummy and this is another great recipe 🙂 I hope you like it 🙂

Ingredients

  • Frozen berry mix – 1/2 cup
  • Frozen blueberries – 1/2 cup
  • Spinach – Handful
  • Banana – 1 small
  • Carrot – 1 small
  • Cucumber – Handful
  • Spirulina – 1/2 tsp
  • Almond milk – 1 cup
  • Honey – 1 tbsp
  • Pecans – 5
  • Granola – 1/2 cup
  • Dessicated coconut – 1 tsp

Note: some smoothie makers differ in size so you may need to adjust your measurements 🙂

Make it

  1. Pop the berry mix, blueberries, spinach, banana, carrot, cucumber, spirulina, and almond milk into the smoothie maker and whiz up
  2. Pop the smoothie mix into a bowl and pop the granola, pecans and coconut on the top

That’s it – sooo easy 🙂

Goats Cheese, Beetroot & Walnut Salad

This is probably one of the dishes I order the most whenever I go out and it’s on the menu 🙂 I love goats cheese. I could eat goats cheese all day long and on a bed of avocado, beetroot and walnuts it is just delicious 🙂 Actually, I just love cheese full stop 😉

It’s so easy to make, I thought why not have it in the comfort of my own home! Yum!

Ingredients

  • Superfood salad leaf mix – 1 cup pp
  • Avocado – 1/2 pp
  • Beetroot – 1-2 pp depending on size
  • Goats cheese – 1/2 cup pp
  • Walnuts – small handful of chopped or halved pp
  • Pine nuts – 6-10 pp
  • Extra virgin olive oil
  • Balsamic glaze / vinegar

Make it

  1. Chop and pop all the salad bits in a bowl
  2. Toast the pine nuts and walnuts slightly – 1 min should do it
  3. Warm the goats cheese in some olive oil in a pan for 30 seconds on each side
  4. Pop the goats cheese on top of the salad
  5. Sprinkle the nuts on top
  6. Drizzle the olive oil and balsamic glaze / vinegar over the top

Sesame Bacon, Egg & Avocado Superfood Salad

An easy to make, fresh and delicious superfood salad!

Ingredients – pp

  • Superfood salad mix – handful
  • Boiled egg – 1
  • Bacon – 2 rashers
  • Avocado – 1/2
  • Beetroot – 1-2
  • Sesame seeds – 1 tbsp
  • Sugar snap peas – 1/2 cup
  • Extra virgin olive oil – 1 tbsp
  • Balsamic glaze – 1 tbsp
  • Coconut oil – 1 tbsp

Make it

  1. Boil the egg for 3-7 mins depending on the consistency you prefer
  2. Chop and fry the bacon in the coconut oil
  3. Saute the sugar snap peas in coconut oil
  4. Wash and pop the superfood salad mix on a plate
  5. Chop and add the beetroot and avocado to the salad
  6. Pop the bacon and sugar snap peas on the salad
  7. Chop and add the boiled egg
  8. Sprinkle the sesame seeds
  9. Drizzle the olive oil and balsamic glaze

Peanut Butter & Banana Superfood Porridge

Mmmm peanut butter and banana *licks lips*… sooo good! So why not have them with your superfood porridge? Scrumptious!

Ingredients

  • Porridge oats – 45g
  • Almond milk – 1 cup or more depending on your consistency preference
  • Spirulina powder – 1/2 tsp
  • Rosehip powder – 1/2 tsp
  • Cacao powder – 1/2 tsp
  • Peanut butter – 1 tbsp.
  • Banana – 1
  • Almonds
  • Beetroot qnola
  • Beetroot and seed sprinkles
  • Honey – 1 tbsp.

Make it

  1. Mix the oats with the almond milk and heat on the hob or in the microwave for 2 mins
  2. Mix in the superfood powders
  3. Pop the peanut butter in the middle of the porridge
  4. Chop and place the banana around it
  5. Add the almonds (I popped mine between the banana slices)
  6. Sprinkle the qnola and beetroot seed sprinkles
  7. Drizzle the honey
