Peanut Butter & Chia Seed Overnight Oats

Hi, my name is Tash and I am a peanut butter addict ๐Ÿ˜€ There are worse things to be addicted to though right ๐Ÿ˜‰

These are my overnight oats with chia seeds made in a peanut butter jar that is just less than 1/4 full and it is delicious! Filling and nutritious and made the night before, this is a perfect quickย breakfast option for all you busy peeps ๐Ÿ™‚ It literally takes 2 minutes to prepare ๐Ÿ™‚

Ingredients

  • Peanut butter – the last bit of a jar ๐Ÿ™‚
  • Organic oats – up to around a 1/3 of the jar
  • Chia seeds – 1 tbsp.
  • Almond milk (or any milk you like) – Fill up so thatย the jar isย 3/4 full

Directionsย 

  1. Push the remaining bit of peanut butter to the sides of the jar (for even distribution when eating ๐Ÿ™‚ )
  2. Pop in the oats and chia seeds in and add the milk
  3. Pop the top on the jar and shake to mix it all up
  4. Pop in the fridge overnight
  5. Take out the next morning and top with whatever you like or just eat is as it is ๐Ÿ™‚
  6. I topped mine with dessicated coconut, freeze dried raspberries, a tsp. of Hartland Fudge vegan chocolate spread and strawberries ๐Ÿ™‚

Creamy Protein Smoothie

A delicious smoothie combination made using nourishing ingredients thatย keep you full and fuel your bodyย ๐Ÿ™‚

Ingredients

  • 1 scoop – protein powder – I used The Organic Protein Companyย Whey Protein
  • 1/2-3/4 cup – unsweetened almond milk
  • 1/3 cup water
  • 3 tbsp – honey Greek yogurt – I used Rachel’s Organic Greek Yogurt
  • 1 tbsp – chia seeds – ย I used Chia Charge seeds
  • 1 pack – frozen smoothie mix – kale, spinach, mango & kiwi – available in most supermarkets

Whizz up in a blender and then top with granola and dried raspberries for a delish crunch ๐Ÿ˜€

Peanut Butter, Blueberry, Almond & Dried Raspberry Toast

If you are a fan of Instagram, (I am obsessed), you’ll know there is such a thing as #toasttuesday ๐Ÿ™‚ I love toast so the fact that it has it’s own day has made me very happy HAHA ๐Ÿ˜€

This is a yummy toast recipe that is fab for breakfast or as a snack anytime during the day ๐Ÿ™‚

Ingredients

  • Wholemeal seeded bread (or any bread of your choice)
  • Peanut butter
  • Frozen blueberries (defrosted in a pan or the microwave)
  • Sliced almonds
  • Freeze dried raspberries

Directions

  1. Toast the bread
  2. Add the peanut butter first
  3. Spoon on the blueberries
  4. Sprinkle the almonds and freeze dried raspberries

Whole Wheat Banana Pancakes

Who wants pancakes? I DO!! ๐Ÿ˜‰ Who doesn’t want pancakes?! Well this recipe takes 2 minutes to make, has healthy ingredients and is made with whole wheat flour so it has a lower GI meaning it will keep you fuller for longer! Yippee! ๐Ÿ™‚

Ingredients (makes approx. 6-7 small pancakes)

  • Ripe bananas – 2
  • Eggs – 2
  • Whole wheat flour – 1 cup
  • Almond milk – 1/4 cup or as required 
  • Baking soda – 1/2 tsp
  • Salt – pinch
  • Coconut oil – 1 tbsp. (for frying the pancakes)

Directions

  1. Mash the bananas in a mixing bowl
  2. Add the rest of the ingredients and whisk into a batter
  3. Heat a frying pan on medium heat and add the coconut oil
  4. Using a ladle – spoon the batter into small circles in the pan
  5. Once you can see bubbles start to form, slowly flip them over and cook on the other side

So simple ๐Ÿ™‚

Serve with whatever you fancy – I used blueberries, sliced almonds, honey and desiccated coconut

Smashed Egg, Cream Cheese & Spinach Bagel

So pretty ๐Ÿ™‚ AND so healthy ๐Ÿ™‚

A yummy combination of flavours with healthy and nutritious ingredients, what more could you want? ๐Ÿ™‚

Ingredients – pp

  • Wholemeal bagel – 1/2
  • Mediterranean herb Philadelphia soft cheese – 1 tbsp.
  • Spinach – 1/2 cup
  • Cherry tomatoes – 1/2 cup
  • Boiled egg – 1
  • Extra virgin olive oil – 1 tsp
  • Balsamic glaze – 1 tsp

Make it

  1. Toast the bagel
  2. Spread the soft cheese on the bagel
  3. Add the spinach leaves
  4. Smash the boiled egg and pile on top of the spinach leaves
  5. Chop the cherry tomatoes and pop on the top
  6. Drizzle the olive oil and balsamic glaze
  7. Sprinkle the black pepper on the top

Berrylicious Smoothie Bowl

Smoothie bowls are so yummy and this is another great recipe ๐Ÿ™‚ I hope you like it ๐Ÿ™‚

Ingredients

  • Frozen berry mix – 1/2 cup
  • Frozen blueberries – 1/2 cup
  • Spinach – Handful
  • Banana – 1 small
  • Carrot – 1 small
  • Cucumber – Handful
  • Spirulina – 1/2 tsp
  • Almond milk – 1 cup
  • Honey – 1 tbsp
  • Pecans – 5
  • Granola – 1/2 cup
  • Dessicated coconut – 1 tsp

Note: some smoothie makers differ in size so you may need to adjust your measurements ๐Ÿ™‚

Make it

  1. Pop the berry mix, blueberries, spinach, banana, carrot, cucumber, spirulina, and almond milk into the smoothie maker and whiz up
  2. Pop the smoothie mix into a bowl and pop the granola, pecans and coconut on the top

That’s it – sooo easy ๐Ÿ™‚

Pear, Kiwi & Blueberry Porridge

A gorgeous combination of flavours all adding some extra nutrients to your morning breakfast ๐Ÿ™‚

Ingredients

  • Porridge oats – xย 1 cup
  • Almond milk – xย 1 cup
  • Pear – x 1
  • Kiwi – x 1
  • Frozen blueberries – 1/2 cup
  • Cinnamon – 1 tsp
  • Sliced almonds
  • Beetroot qnola
  • Beetroot seed mix
  • Honey – x 1 tbsp

Make it

  1. Mix the oats and almond milk in the microwave or on the hob
  2. Chop the pear and kiwi and place on top of the porridge
  3. Defrost the blueberries in the microwave or on the hob (they don’t need long – 30 secs to 1 min)
  4. Pop in the bowl
  5. Sprinkle the cinnamon, sliced almonds, qnola and beetroot seed mix over the top
  6. Drizzle the honey

Peanut Butter & Banana Superfood Porridge

Mmmm peanut butter and banana *licks lips*… sooo good! So why not have them with your superfood porridge? Scrumptious!

Ingredients

  • Porridge oats – 45g
  • Almond milk – 1 cup or more depending on your consistency preference
  • Spirulina powder – 1/2 tsp
  • Rosehip powder – 1/2 tsp
  • Cacao powder – 1/2 tsp
  • Peanut butter – 1 tbsp.
  • Banana – 1
  • Almonds
  • Beetroot qnola
  • Beetroot and seed sprinkles
  • Honey – 1 tbsp.

Make it

  1. Mix the oats with the almond milk and heat on the hob or in the microwave for 2 mins
  2. Mix in the superfood powders
  3. Pop the peanut butter in the middle of the porridge
  4. Chop and place the banana around it
  5. Add the almonds (I popped mine between the banana slices)
  6. Sprinkle the qnola and beetroot seed sprinkles
  7. Drizzle the honey

Chocolate, Berry & Pecan Protein Pancakes

Protein pancakes are a great way to have your protein powder after a workout or just have them for brunch or afternoon tea ๐Ÿ˜‰ However or whenever you have them, they are a delicious alternative to regular pancakes.

By adding raw cacao powder for the chocolate taste you are also adding a superfood – YAY!

This is the recipe I tried and it was lovely but you can adapt the ingredients to suit your tastes ๐Ÿ™‚

Ingredients

  • Vanilla Protein powder (or use chocolate) – 1 scoop pp
  • Cacao powder – 1 tsp
  • Avocado – 1/2 large one or 1 small one pp
  • Egg – 1 pp
  • Almond milk – 1/2 – 1 cup depending on consistency – you want it runny but thick
  • Frozen berries – 1/2 cup
  • Pecans
  • Maple Syrup
  • Coconut oil – 1 tbsp

Make it

  1. Pop the protein powder, cacao, avocado, egg and almond milk into a smoothie cup and blend
  2. Heat the coconut oil to medium heat in a frying pan – you need to ensure that with every batch, you add more coconut oil to the pan to avoid burning your pancakes
  3. Pour the mixture into the pan slowlyย making small circles
  4. When you see small bubbles start to form on the top, use a spatula and turn the pancakes over until cooked through
  5. Heat the frozen berries in a pan until thawed / or pop in the microwave for 30 seconds to 1 minute
  6. Pop the pancakes into a stack and pour the berry mix over the top
  7. Add the pecans and drizzle the maple syrup over the stack

Oaty Superfood & Pecan Smoothie Bowl

I do love a yummy smoothie bowl on a sunny morning ๐Ÿ™‚

The main reason I choose a smoothie bowl more often than a normal smoothie on it’s own these days is due to the fact that chewing our food is actually really important. Sounds silly, of course it’s important, but it’s not just a process we go through to breakย down ourย food into smaller pieces that we can then swallow. The whole digestive process actually begins in the mouth.

When chewing our food, we cover it in saliva which contains an enzyme (ptyalin)ย that begins the process of breaking down our food ready for it to be digested and this enzyme also helps us digest carbohydrates.

Chewing also brings the food to body temperature meaning that our digestive system doesn’t have to work as hard to convert the nutrients into energy.

That doesn’t mean a lovely refreshing smoothie is off the menu though, they will still appear every now and then but probably not as often as a smoothie bowl.

Which leads me nicely, onto this gorgeous superfood smoothie bowl recipe ๐Ÿ˜‰

Ingredients

  • Avocado – 1 small one or 1/2 a large one pp
  • Banana – 1 small one
  • Yogurt – 1 small pot or 2 tbsp. (I used a strawberry activia)
  • Almond milk – 1/2 cup to 1 cup depending on consistency
  • Oats – 1/2 cup
  • Spirulina powder – 1/2 teaspoon
  • Rosehip powder – 1/2 teaspoon
  • Milk thistle powder – 1/2 teaspoon
  • Frozen berries
  • Pecans
  • Beetroot qnola

Make it

  1. Pop the avo, banana, yogurt, almond milk, oats and powders into your smoothie cup and blend until smooth
  2. Pop the berries in a pan and heat until thawed
  3. Place the berries, qnola and pecans on top of your smoothie bowl
  4. Chew! ๐Ÿ˜‰
