Avocado, Chia, Baobab & Protein Smoothie Bowl

I’ve come to the conclusion that if you want your smoothie bowl to be thick and creamy enough to pop other ingredients on top without losing them when they sink into the mixture, (can you tell this has been a long trial and error journey?!) ย you need to add half an avocado ๐Ÿ™‚ It’s the best thickening ingredient ๐Ÿ˜€ and it’s also DELICIOUS! ๐Ÿ˜‰

Ingredients

(liquid measurements may vary depending on the size of your smoothie maker)

  • 1/2 avocado
  • 1 scoop protein powder – I usedย The Organic Protein Companyย protein
  • 1 tsp. baobab powder
  • 1 tbsp. chia seeds
  • 1/2 cup frozen raspberries
  • 1 cup almond milk

Directions

  1. Pop all the ingredients into your smoothie cup and blend using your smoothie maker
  2. Pour into a bowl
  3. Top with anything you like to give it some crunch ๐Ÿ˜€ย I used granola, freeze-dried strawberries and desiccated coconut

Peanut Butter & Chia Seed Overnight Oats

Hi, my name is Tash and I am a peanut butter addict ๐Ÿ˜€ There are worse things to be addicted to though right ๐Ÿ˜‰

These are my overnight oats with chia seeds made in a peanut butter jar that is just less than 1/4 full and it is delicious! Filling and nutritious and made the night before, this is a perfect quickย breakfast option for all you busy peeps ๐Ÿ™‚ It literally takes 2 minutes to prepare ๐Ÿ™‚

Ingredients

  • Peanut butter – the last bit of a jar ๐Ÿ™‚
  • Organic oats – up to around a 1/3 of the jar
  • Chia seeds – 1 tbsp.
  • Almond milk (or any milk you like) – Fill up so thatย the jar isย 3/4 full

Directionsย 

  1. Push the remaining bit of peanut butter to the sides of the jar (for even distribution when eating ๐Ÿ™‚ )
  2. Pop in the oats and chia seeds in and add the milk
  3. Pop the top on the jar and shake to mix it all up
  4. Pop in the fridge overnight
  5. Take out the next morning and top with whatever you like or just eat is as it is ๐Ÿ™‚
  6. I topped mine with dessicated coconut, freeze dried raspberries, a tsp. of Hartland Fudge vegan chocolate spread and strawberries ๐Ÿ™‚

Creamy Protein Smoothie

A delicious smoothie combination made using nourishing ingredients thatย keep you full and fuel your bodyย ๐Ÿ™‚

Ingredients

  • 1 scoop – protein powder – I used The Organic Protein Companyย Whey Protein
  • 1/2-3/4 cup – unsweetened almond milk
  • 1/3 cup water
  • 3 tbsp – honey Greek yogurt – I used Rachel’s Organic Greek Yogurt
  • 1 tbsp – chia seeds – ย I used Chia Charge seeds
  • 1 pack – frozen smoothie mix – kale, spinach, mango & kiwi – available in most supermarkets

Whizz up in a blender and then top with granola and dried raspberries for a delish crunch ๐Ÿ˜€

Peanut Butter, Blueberry, Almond & Dried Raspberry Toast

If you are a fan of Instagram, (I am obsessed), you’ll know there is such a thing as #toasttuesday ๐Ÿ™‚ I love toast so the fact that it has it’s own day has made me very happy HAHA ๐Ÿ˜€

This is a yummy toast recipe that is fab for breakfast or as a snack anytime during the day ๐Ÿ™‚

Ingredients

  • Wholemeal seeded bread (or any bread of your choice)
  • Peanut butter
  • Frozen blueberries (defrosted in a pan or the microwave)
  • Sliced almonds
  • Freeze dried raspberries

Directions

  1. Toast the bread
  2. Add the peanut butter first
  3. Spoon on the blueberries
  4. Sprinkle the almonds and freeze dried raspberries

Banana, Apple, Cinnamon & Raisin Breakfast Muffins

These muffins are made with oats as well as wholewheat flour so they are perfect for a filling and nutritious breakfast ๐Ÿ™‚ Also yummy eaten any other time of the day too, I should add… (as my hubby will confirm) ๐Ÿ˜‰ HA HA!

Ingredients (for 6-7 large muffins)

  • Mashed bananas x 3
  • Melted coconut oil – 1/3 cup
  • Egg yolks x 2
  • Maple syrup – 1/2 cup
  • Honey – 3 tbsp
  • Caramel syrup – 2 tbsp (I use Monin sugar free syrup that I also put in my coffee sometimes) ๐Ÿ™‚
  • Apple puree – 5 tbsp
  • Cinnamon – 2 tsp
  • Coconut sugar – 3 tbsp
  • Gluten free apple and cinnamon porridge oats (if you don’t have these, just add some chopped apple and more cinnamon and use normal oats) – 1 cup
  • Wholemeal self-raising flour – 1.5-2 cups (until a thick dough like consistency)
  • Bicarbonate of soda – 1 tsp
  • Baking powder – 1 tsp
  • Salt – 1 tsp
  • Vanilla extract – 1 tsp

Directions

  1. Pre-heat the oven to gas mark 5 / 190
  2. Pop some muffin cases into a muffin tray ready to be filled
  3. Add all of the above ingredients into a mixing bowl in the order they are written in stirring thoroughly whilst adding them
  4. Pop the mixture into a jug
  5. Pour into muffin cases
  6. Bake in the oven for 35-40 mins or until a knife comes out clean when poked into the centre

Enjoy one warm with a nice cuppa and keep the rest in a sealed containerย for brekkie / snacking ๐Ÿ˜€

Banana, Blueberry & Peanut Butter Toast

Peanut butter on toast is my go-to snack of choice ๐Ÿ˜Š You just can’t beat it ๐Ÿ˜‹ Add some refined sugar free blueberry jam and banana and you’ve got yourself a delicious creamy, crunchy and tangy nutritious snack ๐Ÿ™‚ ๐Ÿ˜

Ingredients

  • Wholemeal seeded toast
  • Peanut butter (I use Biona Organic)
  • Blueberry jam (refined sugar free)
  • Banana

I don’t even have to explain how to make it ๐Ÿ˜‰

Whole Wheat Banana Pancakes

Who wants pancakes? I DO!! ๐Ÿ˜‰ Who doesn’t want pancakes?! Well this recipe takes 2 minutes to make, has healthy ingredients and is made with whole wheat flour so it has a lower GI meaning it will keep you fuller for longer! Yippee! ๐Ÿ™‚

Ingredients (makes approx. 6-7 small pancakes)

  • Ripe bananas – 2
  • Eggs – 2
  • Whole wheat flour – 1 cup
  • Almond milk – 1/4 cup or as required 
  • Baking soda – 1/2 tsp
  • Salt – pinch
  • Coconut oil – 1 tbsp. (for frying the pancakes)

Directions

  1. Mash the bananas in a mixing bowl
  2. Add the rest of the ingredients and whisk into a batter
  3. Heat a frying pan on medium heat and add the coconut oil
  4. Using a ladle – spoon the batter into small circles in the pan
  5. Once you can see bubbles start to form, slowly flip them over and cook on the other side

So simple ๐Ÿ™‚

Serve with whatever you fancy – I used blueberries, sliced almonds, honey and desiccated coconut

Smashed Egg, Cream Cheese & Spinach Bagel

So pretty ๐Ÿ™‚ AND so healthy ๐Ÿ™‚

A yummy combination of flavours with healthy and nutritious ingredients, what more could you want? ๐Ÿ™‚

Ingredients – pp

  • Wholemeal bagel – 1/2
  • Mediterranean herb Philadelphia soft cheese – 1 tbsp.
  • Spinach – 1/2 cup
  • Cherry tomatoes – 1/2 cup
  • Boiled egg – 1
  • Extra virgin olive oil – 1 tsp
  • Balsamic glaze – 1 tsp

Make it

  1. Toast the bagel
  2. Spread the soft cheese on the bagel
  3. Add the spinach leaves
  4. Smash the boiled egg and pile on top of the spinach leaves
  5. Chop the cherry tomatoes and pop on the top
  6. Drizzle the olive oil and balsamic glaze
  7. Sprinkle the black pepper on the top

Done! ๐Ÿ™‚ Enjoy ๐Ÿ™‚

Pear, Kiwi & Blueberry Porridge

A gorgeous combination of flavours all adding some extra nutrients to your morning breakfast ๐Ÿ™‚

Ingredients

  • Porridge oats – xย 1 cup
  • Almond milk – xย 1 cup
  • Pear – x 1
  • Kiwi – x 1
  • Frozen blueberries – 1/2 cup
  • Cinnamon – 1 tsp
  • Sliced almonds
  • Beetroot qnola
  • Beetroot seed mix
  • Honey – x 1 tbsp

Make it

  1. Mix the oats and almond milk in the microwave or on the hob
  2. Chop the pear and kiwi and place on top of the porridge
  3. Defrost the blueberries in the microwave or on the hob (they don’t need long – 30 secs to 1 min)
  4. Pop in the bowl
  5. Sprinkle the cinnamon, sliced almonds, qnola and beetroot seed mix over the top
  6. Drizzle the honey

Raspberry and Kiwi Porridge

Don’t you just love eating brightly coloured food? Makes me smile ๐Ÿ™‚

You know I am a big fan of porridge and love trying new concoctions, this raspberry and kiwi was delicious! ๐Ÿ™‚

Ingredients

  • Porridge oats
  • Almond milk
  • Frozen raspberries
  • Kiwi
  • Sliced almonds
  • Beetroot qnola
  • Honey

Make it

  1. Mix the almond milk with the oats in the microwave or on the hob for a couple of minutes
  2. Defrost the raspberries in the microwave or on the hob
  3. Slice the kiwi
  4. Pop the kiwi and raspberries on top of the porridge
  5. Sprinkle the sliced almonds and qnolaย over the top
  6. Drizzle the honey

Eat and enjoy ๐Ÿ™‚
