Grilled Halloumi on Smashed Avo Toast

Two of my favourite things for brunch today; halloumi and avocado 🙂 So quick and easy but a taste sensation – I do love brunch at the weekends! 🙂

Ingredients

  • Wholemeal bread
  • Avocado – 1/2 or 1 small one pp
  • Halloumi
  • Sunflower and pumpkin seeds
  • Olive oil
  • Black pepper

Make it

  1. Pop the bread in the toaster
  2. Smash some avo in a bowl and add a drizzle of olive oil
  3. Grill the halloumi under the grill or on a griddle pan (I use a griddle pan) for approximately 1-2 minutes on each side or until you can see the brown lines 😉
  4. Spread the avo on the toast
  5. Pop the halloumi on top
  6. Add some black pepper and sprinkle the seeds
